New ingredients are being formulated and be combined with plant based protein to some unbelievable plant based seafoods. From what I have been reading mushroom like Lions Mane is about 14 to 16 dollars a pound and is not available in grocery stores, Having visited several Asian Grocery Stores and Traders Joe which has a nice selection of fresh mushrooms, no lions mane available which is one the premiere mushroom for Vegan seafood. Lions Mane can be used to make a faux lobster entree.
Some of the drawbacks that I see from creating a large increase of mushroom is public awareness and price. I see hope in the price of the lions man mushroom coming down in price lower price grain spawn and mechanical mushroom pickers which are unbelievable.
