Flavor isn’t the only challenge.

Plant-based seafood should ideally do more than resemble seafood.

A piece of fish has a complex structure.
Fish muscle separates into flakes. Shrimp has a characteristic firm bite. Scallops are tender but resilient. Squid has yet another texture.
