Having been studying Atlantic Herring as good inexpensive for omega 3, I wanted to try to make up my own recipe, i first look at trying empanada with Herring as a stuffing and was disappointed as I found no premix or pre made for making an empanada shell. How ever some sources suggested. That I use biscuit mix to make the empanada that did not seem to be appetizing.
Then an idea came to me an Atlantic Herring Omelette using the ingredients that I had available.
Now to what I put in my herring omelette , I put an egg and some egg white, a little bit of milk, red onions, sweet red pepper, canned mushrooms, shredded cheddar cheese, and for the finishing touches I added canned Atlantic herring from Walmart with tomato sauce with a dash of Paricka.
Hating to mess up a skillet I put the mix in a paper bowl suitable for microwaving. I put in microwave for a about 90 seconds and stirred it up some more and cooked in the I microwave for about 90 seconds.
To my surprise it tasted pretty good and is a very filling meal, I had it for dinner.
